Spanish Rice

Introduction

Mom used to make this one pot meal....she always used ground beef but either way it's nummy.
You could also par-boil individual green peppers, then stuff peppers with rice mixture. (I usually leave pepper out of the rice mix if I'm stuffing peppers)

Number of Servings: 12

Ingredients

    8 cups cooked Minute Rice
    2- 26 oz cans Campbells Condensed Tomato Soup
    1 diced onion
    1 lb Lean Ground Turkey
    1/4 c Yellow Mustard
    1.5 oz Crushed Ruffles
    1 tbsp Salk
    1 tbsp Pepper
    1 tbsp Garlic Powder
    1 cup chopped Green Bell Pepper
    1 can yellow sweet corn

Directions

Makes approx 12 1-cup servings
Cook Minute Rice per instructions for
Fry turkey, season with Salt and Pepper
Combine all ingredients except chips in a pan, more or less mustard to taste.

Place in casserole, top with crushed chips, and bake 15 to 20 minutes at 350 degrees.

If stuffing peppers, stuff peppers, prop up in casserole top with chips and back 20 to 25 minutes at 350 degrees
