Ingredients

2 cups corn, frozen
1 cup dices, peeled potato
.5 cup diced onion
2 cups water
2 cups nonfat evaporated milk
Pinch of salt
Pepper as desired.
Directions
Boil potato and onion together in water until potato is fork tender. Add corn and bring back to a boil. Simmer for 5 minutes. Reduce heat and add the evaporated milk. Heat until warm, but DO NOT BOIL. Makes four 1 1/4 cup servings.
