One Skillet Pork Meal

Introduction

A way to use up extra leftover pork tenderloin. A way to use up extra leftover pork tenderloin.
Number of Servings: 4

Ingredients

    12 oz Hormel Always Tender Boneless Pork Loin (leftovers, so pre-cooked), cut into small chunks
    1 medium Onion, chopped
    2 cups Mushrooms, sliced
    1 cup Chickpeas (garbanzo beans)
    1 cup Red Kidney Beans
    14 oz (350 grams) Crushed Tomatoes
    1 tsp Garlic powder, or to taste
    1 tsp black pepper, or to taste
    2 cups (1 package) Uncle Ben's 90 second Long Grain & Wild Rice

Directions

Pre-heat non-stick skillet. Spray with Pam. Add chopped onions and mushrooms and saute until tender. Add chickpeas, red kidney beans, pork, garlic powder and black pepper. (For extra heat, add crushed red pepper at this time.) Heat through. Add 14 oz crushed tomatoes and turn heat to low. Simmer for 20 minutes.

Cook rice according to package directions. Add to simmering mixture and stir through. Serve with a dash of 2% shredded mexican cheese on top (add extra calories.)

Makes 4 generous servings.
