Introduction

A recipe from my grandmother - Zucchini with Chickpeas.
Wonderful as a side dish or served over pasta.

Number of Servings: 4

Ingredients

    2 tsp. Olive Oil
    1 c. canned chickpeas (garbanzo beans), rinsed & drained
    1 onion, chopped
    1/2 lb. small zucchini cut into round pieces
    1/4 tsp. thyme
    1/2 tsp. leaf basil, crumbled
    1 can stewed tomatoes (14 3/4 oz.)
    1/2 tsp. pepper

Directions

Heat oil in skillet over medium heat.
Add onion, zucchini, basil & thyme.
Cook covered for 8 minutes, stirring occasionally.

Stir in tomatoes, chickpeas & pepper.

Cover, simmer 25 minutes or until zucchini is tender.
