Terri T's Scoopable Vanilla Ice Cream, 1/2 cup

Please note my "sugar" substitutions. Neither erythritol or sucralose have carbs, thus will not impact blood sugar. The jury is still out regarding Whey Low for use in low carb diets.

Number of Servings: 6

Ingredients

    1 cup water
    1/3 cup dehydrated egg whites
    1 tsp. vanilla
    2/3 cups sweetener of choice
    2 cups heavy cream

    Terri uses Whey Low, I use a combination of erythritol powder and liquid sucralose sweetener. You can use use Splenda, which will impact the firmness, it won't be as scoopable. However, if you let the ice cream sit on the counter for about 5 minutes or so before serving, it will be just as good.

Directions

Sprinkle dehydrated egg whites over water in blender. Let set for a minute or so. Blend egg whites and water for about 30 seconds. Add sweetener and vanilla, blend until incorporated. Add heavy cream and blend for approximately (but no more than) 1 minute. Pour into ice cream maker and proceed according to manufacturers directions.

NOTE: I add a pinch of xanthan gum at the same time I add the vanilla and sugar - keeps the ice cream even smoother and scoopable.
