Augie's Black Bean Soup

Introduction

I learned to make this soup when we lived in Costa Rica. My family like the bean soup with a drollop of sour cream. I learned to make this soup when we lived in Costa Rica. My family like the bean soup with a drollop of sour cream.
Number of Servings: 6

Ingredients

    2 cups black beans, soaked
    8 cups water
    2 medium onions, chopped
    2 celery stalks, chopped
    4 bouillon cubes
    1 tsp garlic powder
    1/2 tsp cumin
    1/4 tsp cayenne
    1/4 tsp ginger

Directions

Drain the soaked beans, discarding the liquid.
Chop the onions and celery. Add to pressure cooker along with drained beans. Add the seasonings except for the salt.
Cook in pressure cooker for 34 minutes @ 15 lb. pressure.
Serve hot, season with a dash of salt according to taste.
