Crock Pot Black Beans & Rice

Submitted by: KARICHELLE

Introduction

This ultra cheap recipe came from 5dollardinners.com, although it costs less than $2 to make. I modified it to add frozen corn instead of serving corn on the cob on the side. This was great! I didn't have 2 cans of black beans, so I substituted a can of pinto beans. I topped it with very finely shredded cheese and fat free sour cream. Delicious and filling! - 1/17/10
