Introduction

This is just something I threw together to use up some cooked pork from a roast the nite before. My husband said I could make it anytime, it was that good. Its a full meal and so few calories you can even splurge and have a piece of garlic toast. This is just something I threw together to use up some cooked pork from a roast the nite before. Number of Servings: 5

Ingredients

    1 1/2 cups - penne rigate
    6 slices of roast pork, cooked
    6 - green onions, sliced diagonal
    2 - medium carrots, sliced diagonal
    1/2 - green pepper, sliced in strips, then cut in half
    2 cloves - garlic. sliced finely
    2 tbsp. - EVOO - Extra Virgin Olive Oil
    1 ca n - Cream of Mushroom Soup
    3/4 cup - Milk 1%
    5 tbsp. - Herb & Garlic Light Cream Cheese

Directions

Cook pasta according to instructions on box, al dente.
In a large skillet or wok, heat oil, then add all the veggies, and saute until just slightly crisp, add pork. and stir fry until thoroughly heated. Mix soup and milk together. In wok melt the cream cheese, then add soup mixture. Salt & pepper to taste. Mix everything together then add drained pasta and toss together. Serve.

Makes 5 - 1 cup serviings.
