Honey-Rum Mango Sauce

Introduction

This is a unique sauce. It works well with roast meat, or grilled Vegetables. You can serve it over angel food cake with some nonfat whipped yogurt or in place of JELLO in an adult version of JELLO cake.

There is even a Barbados bar that mixes the sauce warm in booze.

By the way if you are in a Barbados bar and can say "Barbados Bar" 5 times fast...you’re not drunk yet.

Number of Servings: 4

Ingredients

    1 ripe mango, peeled and diced
    3/4 cup no-sugar-added pineapple juice
    1 Tbsp Low-Fat Oil Spread (i.e. Promise, I can't believe..., ect.)
    2 Tbsp Honey
    1 Tbsp Rum (or 1/4 tsp rum extract)
    1 Tbsp Fresh Lime Juice
    2 tsp cornstarch (I use arrow root)
    4 tsp water
    1 tsp Lime zest

Directions

1. Plop the mango in a blender or food processor and blend till smooth.

2. Pour the Mango puree in a small to medium sauce pan. Added the pineapple juice, oil spread, honey, rum, and lime juice. Simmer the sauce till it shimmers.

3. Reduce the heat to low and cook the mixture until it thickens, about 2 to 3 minutes. Stir the sauce occasionally so it doesn't stick or burn on the bottom of the pan.

4. Place the cornstarch (or arrow root) in a small bowl and stir in the water to make a slurry.

5. Add the slurry to the saucepan and cook over medium heat till sauce thickens, about another 2 to 3 minutes.

6. Remove from heat and stir in the lime zest.

===Can be served warm or cold.===

===If storing sauce in the fridge be sure to use a plastic or glass bowl with a lid.===
