Shrimp Fried Quinoa

Introduction

I was craving shrimp fried rice. I was out of rice but had some quinoa on hand and decided to give it a try.

This is a fairly quick and simple recipe, and like any fried rice, you can customize it with your favorite meats and veggies.

This is a fairly quick and simple recipe, and like any fried rice, you can customize it with your favorite meats and veggies.

Ingredients

    1/4 c. Quinoa
    1/2 c. broccoli florets
    1/4 c. alfalfa sprouts
    1 oz. shredded carrots
    1/2 c. snow peas
    1 egg
    1 T. butter
    3 oz. shrimp
    soy sauce

    (All ingredients used in my recipe were from Trader Joe's)

Directions

1) Prepare the quinoa as instructed.
2) Melt 1/2 T. of butter in wok.
3) Add egg and scramble
4) Add shrimp
5) Add 1/2 T. butter, melt
6) Add veggies
7) Stir-fry until veggies and shrimp are heated through.
8) Add quinoa
9) Add soy sauce to taste. (I used 2 T. and it ended up a touch salty for my tastes.)
