Orzo Pasta Salad

Introduction

This fresh salad is low in calories and fat. Easy to make and can be varied easily. This fresh salad is low in calories and fat. Easy to make and can be varied easily.
Number of Servings: 12

Ingredients

    8 oz Orzo uncooked
    3 cloves Garlic chopped
    1/2 Medium Onion diced
    6 oz Mixed Baby Squash diced
    1 1/2 cups Broccoli Florets
    8 small Sweet Bell Peppers diced
    1 1/2 cups Sliced Mushrooms
    1 cup cherry tomatoes
    2 Tbsp Extra Virgin Olive Oil
    salt and lemon pepper

Directions

cook orzo according to package directions.
saute veggies in 1 tbsp olive oil
add hot veggies to cooked and drained orzo
cut cherry tomatoes in 4 and add to salad
drizzle 1 tbsp olive oil over salad
add salt and lemon pepper and mix well

cover and put in fridge for at least 2 hours.

1/2 Cup = 1 Serving
Makes 12 Servings
