Tofurkey Mozerella Egg Scramble

Introduction

Tastes great, and it's vegetarian! This was supposed to be an omelet, but I forgot to spray the pan first, so I had to move it around and it ended up being scrambled eggs...still good though ;D Tastes great, and it's vegetarian! Ingredients

    3/4 Cup of Garden Vegetable Egg Beaters

    2 Hickory Smoked Tofurkey Deli Slices, cut into strips

    About 1/8 cup of Mozzarella Cheese, part skim milk

    Whatever seasonings you like. I used a tablespoon of onion powder and McCormick's Montreal Chicken Seasoning.

    Cooking Spray

Directions

1. Heat a frying pan, any size as long as it's wide and deep enough to hold the Egg Beaters, over Medium Heat. Spray with the cooking spray until the bottom is coated.

2. Pour in the Egg Beaters.

3. Sprinkle your seasonings over the Egg Beaters mixture and stir it up with your fork or spatula. (Or you could do this before you pour the egg beaters in...works either way :D)

3. Sprinkle the Mozzarella Cheese evenly over the surface of the Egg Beater's.

4. Lay the Tofurkey strips evenly over the surface, too.

5. Move the Egg Beaters around with your spatula to get it all scrambled up, until it's cooked thoroughly.

Serves 1. I like it on top of a piece of Nature's Own Double Fiber Wheat bread.
