2 cups Whole Wheat Flour
1/2 cup All purpose flour
1 cup Quick Oats
1/4 cup Flax Seed Meal
1 tbs Baking Powder
1/4 cup Packed Brown Sugar
4 medium eggs (slightly beaten)
3 cups 2% Milk
1 Tbs Vanilla Extract
In a separate bowl mix the milk, eggs, and vanilla extract together.
Add the wet ingredients to the dry ingredients, using a whisk to remove any lumps. Add more milk to acquire the desired consistency. The recipe as above is pretty thick, but the pancakes are very fluffy.
Cook on an electric skillet set to 250 degrees. The lower temperature helps the oats to cook all the way, but it does take longer to cook.
Makes about 30 1/4 cup full pancakes.
