BAKED FALAFEL

Introduction

A very low fat baked version of a favorite fried recipe mediterranean recipe.
It is packed with all of the flavor, with none of the additional fat used in the fried version.

Number of Servings: 8

Ingredients

    1 (15 ounce) can chickpeas (garbanzo beans), drained
    1 small Bermuda onion, chopped
    1/2 bunch of fresh parsley, leaf portion only
    2 -3 large cloves of garlic, chopped
    1 egg, beaten
    2 teaspoons ground cumin
    1 teaspoon ground coriander
    1 teaspoon sea salt
    1 dash pepper
    1 teaspoon fresh squeezed lemon juice
    1 teaspoon baking powder
    1 tablespoon olive oil

Directions

1.In a large bowl mash chickpeas until thick and pasty; don't use a blender, as the consistency will be too thin.
In a blender or food processor, process onion, parsley leaves and garlic until smooth. (If no processor is available, chop ingredients into very small pieces). Stir into mashed chickpeas.

2.In a small bowl combine egg, cumin, coriander, salt, pepper, lemon juice and baking powder. Stir into chickpea mixture along with olive oil until mixture is not sticky but will hold together

3.Form 8 balls and then flatten into patties.

4.Line a baking sheet with parchment paper, sil pat or spray with vegetable oil spray, then add the flattened patties

5.Bake at 350 degrees til golden brown, and firm to the touch (about 20 min.)
