Twice Baked Potatoes with Mushrooms & BaconBits

Introduction

Delicious baked potatoes made with mushrooms, bacon bits, cream cheese, Reduced Fat Cheddar, and some seasonings. *Real bacon is great in these too* Delicious baked potatoes made with mushrooms, bacon bits, cream cheese, Reduced Fat Cheddar, and some seasonings. *Real bacon is great in these too*
Number of Servings: 5

Ingredients

    5 Potatoes (poked & baked)
    2 Oz FF Cream Cheese
    5 Tablespoons Bacon Bits (really bacon is great too)
    2 Oz 75% Reduced Fat Cheddar (Cabots is what I use)
    1 Can of Mushrooms, Minced
    1 Tablespoon Italian Seasoning
    A Dash of Pepper

Directions

Bake potatoes, slice each in half, carefully scoop out the middle of the potatoe leaving appx 1/2 inch in the skin.
Mix the removed potato with remaining ingredients. Return to over for 10 minutes or until slightly golden brown on top.

Makes 10 halves, 2 halves is one serving!
