Chicken Panino

Introduction

Grilled sandwich with chicken, red peppers, and mushrooms. Grilled sandwich with chicken, red peppers, and mushrooms.
Number of Servings: 1

Ingredients

    2 slices whole-grain bread (I used Wal-Mart 9-grain bread, it's about 90 cal a slice, I think, but any will do)
    1 tbsp prepared pesto (I used Classico), divided
    1 oz canned chicken
    2 oz white mushrooms, sliced
    1/4 roasted red pepper
    about 1/8 cup reduced-fat Italian cheese

Directions

Cut pepper into smaller strips. (This next part may not be super necessary, but I do it.) Spray a pan with non-stick cooking spray. Saute chicken, mushrooms, and red pepper until mushrooms are almost all the way cooked through. .Spread 1/2 tbsp of pesto on each slice of bread, or all one slice (if you like). Scoop filling from pan onto bread slice (if you put pesto on just one slice, use that one.) Top with cheese. Layer with other bread slice, pesto side down (if you put pesto on both). Spray a George Foreman grill or panini press with non-stick spray. Press sandwich until golden brown. (You can also cook this in a pan, a la grilled cheese.)
