Ingredients

16 oz of cottage cheese 2%
1/4 cup of red bell pepper finely chopped
1/4 cup of green bell pepper finely chopped
1/4 cup of green onion finely chopped
1/4 cup cucumber finely chopped and seeded
1 10 oz can of rotel tomatoes drained
2 tbs of olive oil
1 squeeze of lemon juice (watch for seeds)
salt, pepper, cajun seasoning and tyme to taste
Directions
Mix all ingredients, chill and serve!
This makes about 6 1/2 cup servings. Serving suggestions - eat plain, stuff inside of whole wheat pita, add turkey backon, stuff in boiled egg halves for a festive deviled egg, the list is endless. Enjoy!
