Lower Carb Potato Salad

Introduction

I use half cauliflower and half potatoes to make this potato salad lower carb than normal, but it still has the filling and delicious properties of potatoes! Number of Servings: 3

Ingredients

    1 medium russet potato (or equivalent sized potato of choice)
    1 1/4 cups cauliflower florets
    up to 1/4 cup plain yogurt (or 2 tbsp yogurt and 2 tbsp mayo)
    up to 2 tbsp prepared mustard
    1 dill pickle spear, diced
    3 tbsp red onion, diced
    1 small-medium stalk celery, finely diced (opt)
    dill
    basil
    oregano

Directions

Steam potato and cauliflower until tender, about 10 minutes. Mash lightly with fork or potato masher. Mix in a bowl along with remaining ingredients - add most/all ingredients to taste.

let chill completely before serving... the flavor develops as it gets cold!!
