Chicken Cordon Bleu

Ingredients

8 boneless skinless chicken breast halves
8 slices deli ham
1/2 cup reduced fat cream cheese
4 slices Kroger reduced fat swiss cheese (cut in half)
1 egg white
1/2 c Italian style bread crumbs
nonstick cooking spray
paprika
Directions
1. Heat oven to 350° F. Spray 13x19" baking pan with cooking spray.
2. Place 1 chicken breast between 2 pieces of wax paper or plastic wrap and flatten to 1/4" thick. Repeat with remaining breasts.
3. Place 1 slice of ham on each breast, spread with 1 Tb cream cheese and cover with swiss cheese. Starting at short end, roll up and secure with wooden toothpicks; press edges to seal.
4. Place egg white in small shallow bowl; beat slightly. Place breadcrumbs in another shallow bowl. Carefully dip chicken in egg white; coat with breadcrumbs. Place chicken seam side down in sprayed pan. Spray top of each roll lightly with cooking spray.
5. Bake at 350° F. for 35-40 minutes, or until chicken is fork tender and juices run clear. Sprinkle with paprika.
Serving size is 1 chicken breast.
