Black Eyed Pea and Avocado Salsa

Introduction

Number of Servings: 12

Ingredients

    1 can (15 oz) rinsed, drained black eyed peas
    1 ripe Haas avocado
    1 can (15 oz.) organic sweet yellow corn
    2 cups diced tomatoes
    3/4 c. roughly chopped fresh cilantro (to taste)
    3/4 c. roughly chopped green onion

    Dressing:
    3 cloves garlic, minced
    1/4 c. extra virgin olive oil
    1 tsp. ground cumin
    1/4 c. red wine vinegar
    sea salt and fresh ground pepper to taste.

Directions

Open and drain beans, rinse to remove excess salt.
Mix beans with diced tomato and avocado, corn, cilantro, green onion.

Whisk cumin, salt, pepper, minced garlic into vinegar and oil and pour over all veggies. Mix well. Chill two hours then serve.

Makes about 6 cups of salsa, 12 half cup servings.
