WW Friendly (7pts ea) Stuffed Peppers

Introduction

I usually make the entire mix at once, and 5 or 6 peppers for the night. This way, I can fridge the leftover mix, and just boil up the next batch of peppers when ready. Usually hubby wants the rest for lunch/dinner the next day! ;) I usually make the entire mix at once, and 5 or 6 peppers for the night. Ingredients

    15 green bell peppers (1 to chop, rest to stuff)
    1 red bell pepper
    1 orange bell pepper
    1 yellow bell pepper
    6 roma tomatoes, chopped, seeds removed
    2# ground chuck, 80/20
    Uncle Bens Whole Grain Instant Brown Rice (whole box)
    Nacho/Taco cheese, shredded (1 tbsp ea. as a topping)

Directions

Cooking Instructions:
Make rice, boil peppers (water 2/3 up sides,insides dry), and skillet brown meat at same time to save time! Drain fat! Takes @10-15 mins total
Big Bowl:
Chop and mix veggies-- tomatoes,R,Y,O and 1G Pepper (takes @ 15mins) add cooked rice, add drained/skillet browned meat to mix and stir together.
Pre-heat oven to 350:
Put 1c of filling in each pepper, place in lasagna style cooking dish, top each with a tbsp of shred cheese. Cook until the cheese melts-- @ 5 minutes
