Introduction

This tastes best while complementing with Rice and Dali ( split pigeon peas) toya or Konkani style, with green vegetables and a raita on the side!! Yum! Ingredients

    *Potato, raw, 1 large (3" to 4-1/4" dia.) diced
    Onions, raw, .75 cup, chopped
    *Campari Tomatoes, 3 1500 gms, chopped.
    Olive Oil, 1 tbsp
    Mustard seeds 1/2 tsp.
    Chili powder, .5 tbsp
    coriander powder, 3 tsp
    Asafoetida / Hing powder, 0.25 tsp
    Trader Joe's Sea Salt, 0.25 tsp
    Brown mushrooms, baby bella/crimini, 100 g, 60 gram(s) 4-5 sliced.
    Fresh curry leaves 5-6 each cut in 2-3 pieces.

Directions

Heat oil in a iron wok, drop the mustard seeds. When they krackle, drop in the curry leaves, followed by all the powders, chopped onion. Stir well, drop the diced potatoes, mushrooms, tomatoes and cook till potatoes are tender with a cup of water. Before serving, with a spoon press on the largest piece of potatoes to mash a bit to make the gravy creamier. Serve with basmati rice or Indian flat breads. Tastes great with dal of some sort.
