Cran-Cherry Pecan

Introduction

Cherry Pie Lara Bars are one of my favorites, but at almost $1.50 per bar and with the ingredients listed as dates, almonds & unsweetened cherries - I thought to myself...hmmm...couldn't I just make these.....the answer...YES...and here is the recipe. Which by the way saves me 89 cents per bar! WOW!

This recipe is easy to adapt with other dried fruits so feel free to play around with some of your favorite flavors!!! Add unsweetened coconut, a dash of cinnamon or cocoa powder....whatever your healthy heart desires. Enjoy!

Number of Servings: 8

Ingredients

1 - 8 oz package of chopped dates

1 - 6 oz package of Cherry Flavor Crasins (or your favorite dried fruit, unsweetened will have even less calories per bar)

2/3 C pecans (or your favorite nut), finely chopped

Directions

In a food processor blend dates and craisins together until they start to form a paste. Add chopped nuts and blend another 20-30 seconds until fully combine.

Line a loaf pan with plastic wrap and place mixture into the bottom. Push down firmly to form into one large bar. Lift the plastic wrap out of the pan and secure the plastic around the bar. Using a rolling pin press the bar out into a 9 x 4 rectangle. Place in refriderator to set for about 20 minutes before cutting into 8 equal size square bars.

Makes 8 bars at approximately 61 cents per bar.

  • The recipe didn't work for me. The dried fruits were too hard/sticky and broke the blade/turning mechanism on my B&D food processor. I suggest soaking them in boiling water for a few minutes then draining them before processing. - 4/18/10
