Introduction

A no milk, no egg version of pumpkin custard; low in fat & carbs, high in potassium, vitamin A, protein, & calcium! A no milk, no egg version of pumpkin custard; low in fat & carbs, high in potassium, vitamin A, protein, & calcium!
Number of Servings: 6

Ingredients

    1 15 oz. can pumpkin puree (2 cups)
    8 oz. firm tofu
    6 T brown sugar
    1 T molasses
    1 t cinnamon
    1/4 t ginger
    1/4 t cloves

Directions

Blend all ingredients in food processor until smooth; pour into oiled casserole; bake @ 350 for 35-40 min.; chill & serve. makes 6 servings. can also be used as a dairy free pie filling!
