Slow Cooker Confetti Chicken-Low Sodium Version

Ingredients

* 3 Chicken Chicken Breasts (approx. 1 1/2 lb.)
* APRILDAWN678's Taco Seasoning (Low Sodium Substitute--use only 2 T, the ingredients are listed below)
- 1 T. Chili Powder
- 2 t. Onion Powder
- 1 t. Ground Cumin
- 1 t. Garlic Powder
- 1 t. Paprika
- 1 t. Ground Oregano
* 1 Jar of Tostito's Chunky Mild Salsa
* 1/4 C. Chopped Red Onion
* 1 Can Campbell's Healthy Request Cream of Mushroom Soup
* 1 Can (15.25 oz) Del Monte Whole Kernel Corn [DRAINED]
* 1 Can (15 oz.) Bush's Black Beans [DRAINED]
Directions
Place Chicken Breast in the bottom of the crock pot.
Sprinkle the chicken with the taco seasoning mix.
Add ingredients in the following order:
1. Cream of Mushroom Soup
2. Black Beans
3. Chopped Onions
4. Whole Kernel Corn
5. Mild Salsa
Set crockpot to cook on high for four to six hours.
After cooking for approximately two hours, remove the chicken breast, cube or shred then return the meat to the crock pot, stir then cover.
Stir and monitor periodically as cooking times may vary based on the type of crock pot that is used.
Once done you can serve with Baked Scoops or Brown Rice. Feel free to garnish with lowfat shredded cheese and/or lowfat sour cream. [Note: Garnishments not calculated in the nutritional information for this recipe].
