Slow Cooker Confetti Chicken-Low Sodium Version

Introduction

This is an improvised combination of my two favorite SP recipes (Salsa Chicken and Chicken Taco Stew) and the Taco Seasoning Mix has been replaced with APRILDAWN678's Taco Seasoning (Low Sodium Substitute) This is an improvised combination of my two favorite SP recipes (Salsa Chicken and Chicken Taco Stew) and the Taco Seasoning Mix has been replaced with APRILDAWN678's Taco Seasoning (Low Sodium Substitute)
Number of Servings: 16

Ingredients

    * 3 Chicken Chicken Breasts (approx. 1 1/2 lb.)

    * APRILDAWN678's Taco Seasoning (Low Sodium Substitute--use only 2 T, the ingredients are listed below)

    - 1 T. Chili Powder
    - 2 t. Onion Powder
    - 1 t. Ground Cumin
    - 1 t. Garlic Powder
    - 1 t. Paprika
    - 1 t. Ground Oregano

    * 1 Jar of Tostito's Chunky Mild Salsa

    * 1/4 C. Chopped Red Onion

    * 1 Can Campbell's Healthy Request Cream of Mushroom Soup

    * 1 Can (15.25 oz) Del Monte Whole Kernel Corn [DRAINED]

    * 1 Can (15 oz.) Bush's Black Beans [DRAINED]



Directions

Place Chicken Breast in the bottom of the crock pot.

Sprinkle the chicken with the taco seasoning mix.

Add ingredients in the following order:

1. Cream of Mushroom Soup
2. Black Beans
3. Chopped Onions
4. Whole Kernel Corn
5. Mild Salsa

Set crockpot to cook on high for four to six hours.

After cooking for approximately two hours, remove the chicken breast, cube or shred then return the meat to the crock pot, stir then cover.

Stir and monitor periodically as cooking times may vary based on the type of crock pot that is used.

Once done you can serve with Baked Scoops or Brown Rice. Feel free to garnish with lowfat shredded cheese and/or lowfat sour cream. [Note: Garnishments not calculated in the nutritional information for this recipe].

Yields 16 half-cup Servings.

    I made mine with substituting Frozen corn instead of canned and you get 150 mg less sodium.. and it tasted better. - 4/14/10

  • I used no salt added corn and reduced salt black beans to lower the sodium content even more and served this over rice. It was fantastic! My picky 11 year old gave it 5 stars and ate 2 servings. We will definately be making this again! - 1/15/10
