Creamy Spinach Pasta Sauce

Ingredients

    1 - 10 oz. pkg. frozen spinach, thawed
    1 c. chicken broth
    3 cloves garlic, very finely chopped
    1 t. onion powder
    1/4 c. evaporated skim milk
    1/3 c. Parmesan cheese
    Salt & Pepper to taste

Directions


Thaw spinach. Add broth, garlic, onion powder and spinach in a 1 quart saucepan. Cook until garlic and spinach are tender. Place in a food processor and process until smooth. Add back to pan and add broth. Add cheese and evaporated milk to spinach mixture. Heat on low while preparing pasta. Gently toss pasta in sauce to coat. Makes 4 servings.
