Better Banana Bread with Dark Chocolate Chips

Introduction

Using a few better ingredients, like whole wheat flour, applesauce instead of oil, and smart balance instead of butter, this bread ends up being better for you! It's really similar to other low calorie banana bread recipes, I just tweaked the ingredients a bit. Ingredients

    1 1/2 cups white flour
    2 cups whole wheat flour
    1 tsp. baking soda
    1/2 tsp salt
    3 ripe bananas (medium)
    1 tsp cinnamon
    1 tsp ground cloves
    1/2 cup Smart Balance Buttery Spread
    2 eggs
    3/4 cup sugar
    3/4 cup applesauce, unsweetened
    1/2 cup dark chocolate chips
    Pam
    1 tbsp sugar+cinnamon mix to sprinkle on top



Directions

Preheat oven to 350 degrees. Spray two 9 inch loaf pans with Pam Baking spray.

Mix flour, baking soda and salt in a large bowl. Create a small well in middle. Set aside.

In another bowl, mash the bananas with the cinnamon and cloves.

In a medium bowl, cream sugar, Smart Balance buttery spread with the eggs. Mix in banana and applesauce. Stir until well combined.

Add the banana+applesauce mix gradually into the flour mix. Mix well. Add chocolate chips (if desired).

Split into two pans and sprinkle tops with sugar/cinnamon mix (if desired). Bake at 350 for 40-45 minutes or until top is browned and springs back to touch. You may have to increase baking time if using 8 inch pans.

Makes 30 servings (each loaf cut into 15 slices)
