Creamy Garlic & Herb Chicken w/ Wild Rice

This is not the lowest in fat/ calories/ carbs, but it is delicious and not too terrible when it comes to the nutritional value...also, a healthy dose of protien. Its a treat and if you are really careful to cut back during the day, a great change from "diet food". Also, great for a meal when entertaining, and bland "diet food" is not an option. You could also cut a breast in half, use only 1/2 cup of the rice, and dont spoon any extra sauce onto your chicken to cut back on fat/ calories/ carbs.

Ingredients

    3- boneless~ skinless chicken breast
    1- pkg Alouette Garlic and Herb Spreadable Cheese
    1 box (7oz) Zatarain's Long Grain/ Wild Rice (butter is optional in the wild rice and not used in my version)

Directions

Perpare wild rice from directions on box. While rice is cooking, Spray skillet w/ non-stick spray. Brown and cook chicken thouroughly on both sides. Add Alouette to chicken( when fully cooked) and lower heat to low. Allow Alouette to melt and simmer for a few minutes. Serve chicken breast over rice, spooning some of the sauce over the top.
*Note~ as said in intro, this is not "diet food". But it is still better than a chick-fried steak, or a burger. It makes a great meal for entertaining. You could have the fat/ cal/ carbs reduced signifigantly if you cut the serving in half. This recipe is calculated with a full cup of rice, a whole chicken breast, and 1/3 of the package of the Alouette. Cut that in half to have a wonderful meal with 325 cal/ 10g fat/ 25 carbs...I hope you enjoy!

  • Alouette does make a "light" spread that would cut the calories quite a bit, and this would also be good with Boursin's light cheese (but a bit more expensive.) You could also experiment with thinning the "sauce" with broth, milk, or white wine to make the cheese go further-- cut costs a little as - 7/11/09

  • I agree...Im so sick of "diet food". This was so yummy, and honestly, not that bad nutrition-wise...a little planning during the day, and I ate the FULL serving w/ steamed broccoli and still stayed within my goals! Thank you for a flavorful change! - 4/30/09

  • Absolutely incredible!!! I will admit, Its not the lowest in fat content, but I needed a dish for a dinner party, and this was perfect! My guests raved! ( at this time, there seems to be an error and it wont allow my to give stars...I give it 5 stars-will return to make it official) - 4/30/09
