The Best Taco Bean Soup Ever (Makes 20 1/2 Cup Serv)

Introduction

Super easy, hearty bean soup. This is also really good with a can of diced tomatos and a jalapeno but the nutritional info did not include tomatos or the pepper. Cornbread goes well with this hearty soup.

This is a favorite in the fall at our football tailgate parties. We put it together in the morning and play the rest of the day.

Number of Servings: 20

Ingredients

    -1 lb Extra Lean Ground Beef
    - 1 Pkg Taco Seasoning
    - 1 Large Onion (diced)
    - 2 Cloves of Garlic (chopped)
    - 1/2 Bottle Beef Boullion (2.25 oz)
    -1 1/2 t Ground Cumin
    - 1 Lg Can Diced Tomatos (Optional)

Directions

-Brown gound beef then drain well
-Add diced onions and garlic and cook for 5 minutes
-Add 1 Pkg Taco Seasoning Mix , cumin and stir until well combined (may need to add 1/2 cup of water)

In crock pot:

-Add cooked beef (as prepared above)
-Add 1 package 15 Bean Soup
-Add 1/2 bottle Beef Boullion
-Add diced tomatos (optional)
-Add enough water to cover the mixture plus 2 inches (remember the beans are dry when adding to the crock pot so they will absorb much of the water)

Cook in crock pot on high for 5 hours or on low for 9 hours.

This can also be made on the stove if you prefer.

This recipe makes approximately 20 1/2 cup servings or 10 1 cup servings.

Serving suggestions:

-Serve over brown rice with chopped green onions
-Serve with dollop of sour cream, chopped green onions and grated cheddar cheese
-Serve with cornbread
