Oat and Flax Muffins

Ingredients

    1 small banana
    1 Tbs. olive oil
    1 large egg
    2 Tbs. Agave nectar
    1/2 cup ground flaxseed
    1/4 cup whole wheat flour
    1/2 cup old-fashioned oats
    1/2 tep baking soda

Directions

Preheat oven to 350 degrees. Mash banana with a fork and mix with olive oil, egg, agave and flaxseed in a large bowl. Mix remaining ingredients together in a small bowl then add the dry to the wet and mix until combined (do not overmix). Bake 15-20 minutes. Makes 6 muffins.
