Golden Zucchini and Onion patties

Introduction

Number of Servings: 4

Ingredients

    2 1/2 cups coarsly grated goden zuchini, yellow crookneck squash or green zuchini. (about 2 or 3 medium total 10 oz)

    1 medium onion croasely grated

    1 Tbls chpped garlic

    Salt and pepper to tastes

    1 large egg, lightly beaten

    3 Tbls all-purpose flour

    3 Tbls olive oil for frying

Directions

1. Line a tray with paper towels to drain the patties. Combine zucchini and onion in a colander. Squeeze to remove excess liquid. Transfer to a bowl. Add garlic, salt, and pepper. Add beaten egg and stir in lightly. Stir in flour.

2. Heat oil in a non-stick pan. For each patty drop 1 heaping Tablespoon of zucchini into pan. Flatten them slightly with back of spoon. Fry over medium heat for 2 to 3 minuets on each side or until golden brown. Turn carefully with 2 spatulas. Transfer to paper towel. Stir batter before frying each batch. add more oil as needed.and before addding more latkes.
