Introduction

Ingredients

    1-1/2 cups cooked or canned no-salt organic chickpeas
    1/4 cup fresh lemon juice
    1/3 cup tahini (or 1/2 cup and skip olive oil)
    1 tablespoon extra virgin olive oil (reserve 1/2 for top)
    2 teaspoons Bragg's Liquid Aminos

Directions

Combine all ingredients except 1/2 tablespoon olive oil in food processor and process until smooth. You'll need to scrapes sides often with a rubber spatula. Turn into sealable container (I use a 3-cup round Pyrex bowl with rubber lid). Drizzle 1/2 tablespoon oil on top if storing for a while to prevent drying out.

Serve with crudite (crisp, raw veggies like pepper strips, baby carrots, sugar-snap peas, etc.) or pita bread. Great spread on sandwiches or burgers in place of mayo.

Makes 8 servings, 1/4-cup each.
