I Medium - Large Napa cabbage (can substitute 1 Medium - Large Romaine Lettuce + 1 cup chopped cabbage)
1 Bunch green onions/scallions
1/2 cup chopped pea pods
2 pkg Ramen noodles without seasoning
1/2 cup sliced or slivered almonds
1/2 cup sunflower kernels
1/4 cup sesame seeds
1/2 cup olive oil
1/2 cup sugar
1/4 cup red wine vinegar
1 T soy sauce
Toast noodles, almonds, sunflower kernels and sesame seeds at 350 for 12 min or until toasted. Set aside to cool.
Chop up cabbage into large bowl. Chop green onions and pea pods & add to cabbage. Toss well. Add nut mixture to greens and toss well.
Combine vinegar, olive oil, sugar and soy sauce in shaker and shake until throroughly mixed. Pour over salad. Prepare salad at least 1 hr before serving to insure dressing mixes thoroughly with salad.
* leftovers should be eaten within a day or two to prevent nuts/noodles from becoming soggy
