Chicken and Fresh Cabbage Pasta Salad

Introduction

I watched RR make something simliar to this on her talk show one afternoon and tried to recreate it.

The fried onions really make this salad but you can choose to omit if they are just too much for you.

The fried onions really make this salad but you can choose to omit if they are just too much for you.

Number of Servings: 6

Ingredients

    6 oz whole wheat rotini
    1 T honey
    1 lime
    10 oz canned chicken
    1/2 C safflower oil
    1 C shredded napa cabbage
    1 C shredded red cabbage
    1/2 a cucumber - diced
    8 radishes - sliced
    2 carrots - shredded
    1/2 C onion - sliced
    salt & pepper to taste


Directions

Boil the noodles as directed on the package.

In a high saucepan deep fry the onions in the 1/2 cup of safflower oil. Remove once cooked and allow to drain on paper towel. Sprinkle with the salt.

Mix together the lime juice, honey and salt & pepper. Assemble all the raw veggies and toss with the cooked pasta and the canned chicken. Pour over the salad dressing and top with the fried onions.

*The dressing is meant to be very light - not overpowering so if it doesn't look like you have enough that's ok. That's how I personally like it - but you can always double the dressing if you want more!
