Vegetarian Stroganoff "hamburger" helper

Introduction

Number of Servings: 5

Ingredients

    1 package of Boca meatless ground crumbles (frozen)
    2.25 cups skim Milk (you can use unflavored soy milk)
    1 package of Hamburger Helper Stroganoff
    1 cup of water
    1 Tbsp of Extra Virgin Olive Oil
    1 medium sweep onion

Directions

Place the Boca crumbles on a large non-stick pan with cover under medium-low heat.
Add the olive oil and mix well.
Dice the onions and add to the crumble mix
Saute until the crumbles are brown and the onions soft
Remove the cover
Add the water to the pan
Add the milk to the pan
Add the sauce package to the pan and mix well making sure that the sauce is dissolved.
Add the noodles to the pan, mix and turn the heat up to medium-high. Mix occasionally until it boils.
Mix again, turn the hit to low and add cover (if you are using an electric burner) remove the covered pan from the burner for 2 minutes until the burner reaches the desired temperature.
Let shimmer for 10 minutes or until the noodles are done to your preference. Remove from hear, uncover and let sit for a couple of minutes until the sauce has reached the consistency of your preference.

Makes 5 services of about 1.5 cup each. Much lower calories and fat that the original and higher protein. Salt is still high, so watch it, if you are in a salt-restricted diet.

Feel free to top with toppings of your choice (Parmesan cheese, fried onions, nuts - not calculated in the nutritional value). Left-overs heat really well in the microwave (add a TBS of water and heat on high for a minute or so). Quick week day food with lunch leftovers for the next day.

    If you get the whole grain hamburger helper stroganoff then it doesn't have the beef stock. :D I like to add yves meatless ground to it instead of the boca crumbles though. - 10/25/12

  • Does anybody know how to get some of these ingredients in the UK. Recipe sounds lovely but don't know what half of it is?

    try any soy-based ground meat substitute for boca grounds (e.g quorn brand) and any short of packaged noodle dish with sauce in powder form for Hamburger Helper Stroganoff
