1/3 cup cooked long grain brown rice
Frozen peas, 1/5 cup
Scallions, 1/2 cup, just the green part
1 large egg, scrambled
Lite Soy Sauce, 2 tbsp
Crack egg and whisk vigorously. Pour into hot skillet and move around slowly.
Once egg it set, add in peas and scallions and cook until peas are tender and scallions are filmy.
Add in 1/3 cup of cooked brown rice. Fold soy sauce into pan. Stir for about 30 seconds and remove from heat.
