Low Fat Crunchy Baked Chicken

Number of Servings: 4


    1/8 cup skim milk
    1/8 cup Egg Beaters
    1 clove garlic
    1 cup crushed cornflakes
    4 sprigs of fresh parsley or 2 tablespoon dried parsley
    1 tablespoon chopped fresh chives or 1/2 tablespoon dried chives
    1/2 - 1 teaspoon paprika
    4 boneless chicken breast halves


Put cornflakes in a ziplock bag and crush them with a rolling pin.
Pour into a bowl - mix paprika, parsley and chives with cornflakes.

In a second bowl, whisk egg substitute and skim milk. Add in pressed or finely chopped garlic clove.

Coat a casserole dish with baking spray.

Dip each chicken breast in milk mixture and then in cornflake mixture. Place in the casserole dish.

Bake at 425 degrees for 25 minutes.

Serve with fresh vegetables or salad.
