Introduction

Number of Servings: 3

Ingredients

    1 eggplant
    1 tomato
    1/2 cup feta
    1 Tbsp balsamic vinegar
    1 Tbsp olive oil
    juice from 1/2 lemon
    Various seasonings

Directions

Cut eggplant in 1/2 inch slices
Cut tomato in slices
Baste both sides of eggplant with oil/vinegar/lemon mixture
Broil 6-10 minutes, turning over, until tender
Stack eggplant, tomato and feta-seasoning as you go
Put leftover feta on leftover eggplant slices
Bake at 350 for 5 more minutes, or until cheese is very soft
