Number of Servings: 6

Ingredients

    about 1.5 pounds ground turkey (lean is OK, but not critical)
    1 tbsp cornstarch
    about 3 oz water
    0.5 cup chopped onion
    3 cloves garlic, minced
    1 tsp cumin
    1 tsp chili powder
    2 tsp salt (more to taste if needed)
    1/2 tsp black pepper (more to taste if needed)
    1 tsp cayenne pepper
    1 tbsp your favorite hot sauce
    another 5 oz water or so

Directions

Brown the meat. Once the pink is gone, remove from the pan to drain the fat as best you can.

Brown the onion and garlic in the pan you just used for the meat. (You can add a little of the drained fat if you think you need it - I usually don't.)

Add the meat back into the pan. Mix the cornstarch in about 3 oz water until the lumps dissolve. Add the cornstarch mixture to the pan. Add the rest of the spices, and then another 5 oz or so of water. Stir everything up until the meat is evenly coated, and allow to simmer for about 15 minutes or so until the sauce has reduced.

Variations: Try fresh spices! Add coriander, fresh hot peppers, or hot paprika.

Makes 6 4-oz servings.
