Rosemary Potato Wedges

Introduction

These are a great substitue for french fries for any meal. You can cut them thinner if you need them to cook faster, I usually do after a long day at work. These are a great substitue for french fries for any meal. You can cut them thinner if you need them to cook faster, I usually do after a long day at work.
Number of Servings: 3

Ingredients

    450 grams (about 1 lb) Red Potatoes
    2 T Olive Oil
    4 T Rosemary or italian seasoning

Directions

Preheat oven to 400 degrees. If you are serving with a dish at another temperature, you can raise or lower the temperature, just check the potatoes to see if they are done during the cooking time.

Cut potatoes into wedges or 1/4 inch thick slices if you want to cut down on cooking time. Mix in bowl with olive oil and rosemary.

Spread on a baking sheet or a baking stone so that the potatoes are not on top of eachother.

Loosen and flip potatoes once during cooking.

Bake for 20-25 minutes at 400 degrees until potatoes are cooked through and have browned. Cook longer for crisps.

Makes 3 servings.
