!!Granola gone Muffin!!

Introduction

You can make these puffier with more water and baking soda, but I just wanted a flat bread type one morning. I cut them up into tiny squares and served them along side some some cooked oat groats (healthier oatmeal) with a tad bit of peanut butter. Absolutely delicious!!!! Ingredients

    * 4 Tbsp flaxseed meal
    * 2 Tbsp garbanzo bean flour
    * 2 Tbsp buckwheat flour
    * 2 Tbsp coconut flour
    * 1 tsp raw organic cane sugar
    * 3/4 cup ground raw almonds
    * 3/4 cup ground raw pecans
    * 1/4 cup raw sunflower seeds
    * 3 servings (packets) sun crystals (optional)
    * 1/2 Tbsp honey
    * 1/2 Tbsp agave (or 1 Tbsp honey versus 1/2 and 1/2)
    * 1 tsp raw organic cane sugar
    * 1 Tbsp allspice or pumpkin spice or cinnamon
    * 1/2 cup unsweetened apple sauce
    * 1/2 banana, small (somewhat ripe in order to mash)
    * 1/2-3/4 cup water (more or less for desired thickness...the thicker is is the more cookie like it will be)
    * 1/4 cup almond milk (any milk is ok)
    * 2 Tbsp melted butter (Smart Balance is my choice)
    * 1/4 tsp baking soda
    * 1/8 tsp salt

Directions

Preheat oven to 370 deg F.

Using a food processer, grind almonds and pecans into small chunks...can chop by hand but it will take forever!!

Place all dry ingredients into bowl until well mixed.

Add all wet ingredients (except for the banana) and blend well. Add mashed banana and once again blend well.

Coat baking sheet with non-stick spray and spread mixture all over pan. Place in oven on middle rack.

Allow to bake for 15-20 min. For softer pieces, allow less time and for crunchier pieces allow more time.

With a knife or pizza cutter, cut "Granola gone Muffin" into about 50 tiny pieces for little bites or cut into larger portions if desired. Let me know how you like it!! :)

You can also add golden raisins to the mix...YUM :)...top with a little nut butter, jelly, or even chocolate for a healthy treat!
