Crunchy Peanut Butter Cookies

Introduction

Using the natural raw sugar really packs a crunch on the bottom while the peanut butter keeps it nice and soft on the inside. Quick and easy to prepare and make! :)
Using the natural raw sugar really packs a crunch on the bottom while the peanut butter keeps it nice and soft on the inside. Quick and easy to prepare and make! :)

Number of Servings: 15

Ingredients

    * 1 cup all natural peanut butter, softened
    * 3/4 cup raw cane sugar
    * 1/2 cup natural unsweetened applesauce
    * 2 eggs, beaten
    * 1/2 Tbsp vanilla extract
    * 1 Tbsp half and half (optional)
    * 1 1/2 Tbsp flaxseed meal

Directions

Preheat oven to 350 deg F.

Mix all dry ingredients until well blended.

Add the rest of the wet ingredients and mix well.

For big cookies, use about 1 heaping Tbsp of mix and shape with fingers. For small cookies, use a little less than 1 Tbsp of mix.

Place in oven on center rack and bake for about 8-10 min or until a nice golden brown. Bigger, crispier cookies might take up 15 min.
