Introduction

Number of Servings: 4

Ingredients

    4 eggs (1 per person)
    6 link breakfast sausage, or bulk breakfast sausage
    1 cup zucchini, diced
    1 cup mushrooms, diced
    1 med. tomato, sliced
    3 or 4 slices of a hard cheese

Directions

In a large skillet, melt ICBINB (canola oil is also very good)

Cut sausage, zucchini and mushrooms in like size pieces. Cook sausage through & add the vegetables cook. Beat eggs & pour over cooked sausage and vegetables. lay slices of tomato & cheese on top of egg.

Move to 350 degree oven for about 30 minutes, or under the broiler for about 15 minutes.

let stand for a few minutes, cut into 4 pieces and serve.
