2 cups flour
2 cups milk
1/4 cup vegetable oil
Whisk together eggs and milk. Whisk in flour 1 cup at a time until frothy and set aside.
Distribute oil evenly in 12-cup muffin (about 1 tsp per cup). Place muffin pan with oil in the preheated oven for 5-10 minutes until smoking.
Remove from oven. QUICKLY ladle about 1/4 cup of the batter in each muffin cup.
Bake for 30-35 minutes. Serve immediately.
*Best smothered in creamy meat gravy and served with roasted meat, roasted vegetables and mashed potatoes for a proper English Sunday Dinner.
