This is a go-to meal for me when I don't have time to prepare something more complicated. It could also be eaten cold, just warm the tortilla slightly to soften before putting on the toppings. Ingredients

1 8-inch flour tortilla (or whole wheat)
1/4 cup canned pinto beans
2 tbsp chopped Haas avocado
2 tbsp salsa
1.5 oz. shredded reduced fat cheese

Directions
Place the tortilla on a microwavable plate. Top the tortilla with the beans, avocado, salsa and shredded cheese. Microwave for one minute (depending on your microwave's settings) or just long enough to melt the cheese. Can be garnished with sour cream (not included in the nutrition calculation) and fresh cilantro if desired.
You can also substitute whole wheat, or low-carb/low fat tortillas. These calculations are based on a regular flour tortilla.
