IntroductionA good way to get in a daily serving of legumes. A good way to get in a daily serving of legumes.
1 Large Cucumber, chopped
1/2C Black Eyed Peas (if using can, rinse under cold water first)
1C Red Bell Pepper, large chopped
1/4C. Feta Cheese, crumbled
1/4C. Red Onion, large chop
1T. Extra Virgin Olive Oil
2t. Fresh Squeezed Lemon Juice
1/4t. Dried Oregano (or 1t. fresh oregano finely chopped)
1 Large Clove Garlic, pressed
Pepper TT (freshly ground to taste)
In large glass salad bowl, add chopped cucumber, black eyed peas, red bell pepper, red onion. Pour over dressing, add pepper and toss well.
Top with crumbled feta cheese.
A nice side dish for 4oz. breast of chicken or 2 small lamb chops.
