Texas Chocolate Sheet Cake

Introduction

Number of Servings: 20

Ingredients

    Cake
    2 cups flour
    2 cups sugar
    1/2 tsp salt

    1 stick butter
    4 tbs cocoa
    1/2 cup vegetable oil
    1 cup water

    2 eggs
    1/2 cup butter milk
    1 tsp baking soda
    1 tsp vanilla

    ICING
    2 eggs
    1/2 cup butter milk
    1 tsp baking soda
    1 tsp vanilla
    3 tablespoons unsweetened cocoa
    2 1/4 cups sifted confectioners' sugar

Directions

mix in large bowl: 2 cups flour
2 cups sugar
1/2 tsp salt
bring to boil the following ingredients: 1 stick butter
4 tbs cocoa
1/2 cup vegetable oil
1 cup water
then add these: 2 eggs
1/2 cup butter milk
1 tsp baking soda
1 tsp vanilla

Pour into a greased jelly roll pay. Bake at 350 degrees F for 25 to 30 mins. While baking, prepare the icing: cream together the following:

2 eggs
1/2 cup butter milk
1 tsp baking soda
1 tsp vanilla
3 tablespoons unsweetened cocoa
2 1/4 cups sifted confectioners' sugar

Pour onto the cake when it comes out of the oven. Cool on a wire rack.

  • Not sure what I did wrong, but I ended up with an upside-down Texas sheet cake - it floated in the frosting! I don't know if I didn't mix it enough or what. It was awfully runny! Flavor was OK though... - 1/29/11
