This recipe was adapted from Food Network.com. It is super easy. The ingredients below call for low-salt chicken broth - the nutritional info uses regular chicken broth. You choose.
You can serve it over pasta if you like. We eat it as is.

Ingredients

    1 Turkey Sausage Link - Opened and crumbled
    2 Tbsp Olive Oil (a little extra for drizzling)
    1 medium onion - chopped
    2 carrots, peeled & chopped
    2 celery stalkes - chopped
    2 garlic cloves - chopped
    1 can (14-1/2 oz) diced tomatoes (We use Fire Roasted Tomatoes)
    1 pound of dry lentil (approx 1-1/2 cups)
    6 cups low-salt Chicken broth
    1 tsp dried thyme (4-6 fresh sprigs)
    10 oz frozen spinach chopped (thawed)

Directions

6 Servings
Heat oil in pan and brown sausage.
Add onion, carrots and celery. Then add the garlic and salt & pepper to taste. Saute until all veggies are tender (5-8 minutes)
Add the can of tomatoes (with juice) and simmer for about 8 minute - stirring occasionally (juice should evaporate a little and tomatoes break down)
Add the Lentils and mix to coat.
Stir in Broth and add thyme.
Bring to a boil over high heat. Then Cover and simmer over low heat until lentils are almost tender - approx 30 min.

Add spinach and toss to heat.

Ladle into bowls and enjoy. You can sprinkle with low-fat Parmesan cheese if you like.
