Easy Orange Marmalade Tofu

Introduction

This is simply delicious served over 1 cup plain jasmine rice and snow peas on the side. You can even try this with tofu. This is simply delicious served over 1 cup plain jasmine rice and snow peas on the side. You can even try this with tofu.
Number of Servings: 2

Ingredients

    1/2 cup dry jasmine rice
    2 four oz. chicken breasts, no skin
    7 or 8 rings of white onion (about 1 cup)
    1 tbsp canola oil
    Three-pepper grinder seasoning
    1 cup snow peas
    4 tbsp Smucker's brand organic orange marmalade

Directions

Grease your oven safe casserole dish down with canola oil. Cut about 7 rings of white onion and place in bottom of casserole dish. Season chicken breast with three-pepper grinder seasoning. Preheat oven to 350° and bake at 350-375° for 45 minutes or until chicken is thoroughly cooked. Heat orange marmalade in microwave for about 30 seconds. Pour over chicken, onions and rice. Serve with steamed snow peas. Serves 1
