Introduction

This recipe uses lentils instead of bulgar wheat for a low-carb version This recipe uses lentils instead of bulgar wheat for a low-carb version
Number of Servings: 8

Ingredients

    2 cups cooked lentils
    2 bunches parsley, finely chopped
    1 medium onion, chopped
    salt and pepper to taste
    5 cloves garlic (more or less according to your taste)
    2 T olive oil
    1/4 Cup lemon juice

Directions

Mix all ingredients together. Tastes best if allowed to set in refridgerator an hour before serving. Can also add chopped tomatoes (I can't have them because they increase insulin levels). Serving size is appox. 1/4 Cup
